Life has thrown our family some incredible challenges recently. My husband was diagnosed with a severe autoimmune disease that has unfortunately left him completely unable to work. At the same time, our wonderful son is autistic and requires full-time, dedicated care and stability at home.

Because of our circumstances, a traditional 9-to-5 job is no longer possible for me. I need a career that allows me to be the primary caregiver for both my husband and my son, while still generating enough income to keep a roof over our heads and pay for medical expenses.

Out of this hardship, a beautiful opportunity was born. For the past several months, I have been developing and testing a unique food concept right from our kitchen. We have already run small-scale tests, pop-ups, and tastings in our community—and the response has been overwhelming. The demand is there, the product is highly profitable, and the feedback has proven that this business can and will succeed.

My goal is to launch a mobile food truck. A food truck gives me the exact flexibility our family needs. It allows me to set my own hours, work around my family's medical and care schedules, and tap into a highly profitable local market with a product people already love.
