After five years of operating my contemporary Mexican bakery, At Heart Panadería on a mostly small scale, it's time to up my production in a big way. My weekly farmers market in Reynoldstown runs just through the end of October. I'm in planning mode now for pop ups with a café concept, in addition to my usual pan dulce offerings, in November and December 2026 and beyond. 

This has been a difficult year for many small businesses, mine included. In order to continue growing this bakery, I will need some assistance. For five years I've worked hard to offer Atlanta delicious and thoughtfully-made pan dulce using local and seasonal ingredients. At Heart is a farmers market-centered panadería, and will continue to operate with local produce at the heart-center of the bakery. 

 

I am crowdfunding today for help with:

  • Upgrading to a commercial mixer after 5 years of using a Kitchenaid stand mixer not designed for commercial use.
  • To purchase a small commercial upright freezer to help with production efficiency (cookie dough and empanada dough, mostly).
  • All manner of storage but especially flour bins and covered bins to help protect my pan dulce while exposed to the elements at the farmers market each week.
  • Additionally, moving forward I'd like to work with regional grains from Carolina Ground and Anson Mills for conchas and other pastry. I would also like to begin sourcing Sonoran flour, a soft white wheat, from the Los Angeles miller Grist & Toll for cakes and cookies and to bring in some California, my home state, to the Southeast. Your support will help me to purchase these incredible flours on a wholesale basis for the remainder of this year and well into 2027.
  • Lastly, branded promotional materials. Just about every week at my market, someone asks for my business card and I'd like to finally have something to hand out.

 

This crowdfund campaign is rewards-based — you have the choice to opt-in to receive the benefits listed below depending on the amount of your donation. 

$25: At Heart branded sticker. 

$50: At Heart branded sticker + one complimentary pastry at an upcoming Reynoldstown market. 

$75 - $100: At Heart sticker + one complimentary market pastry + 15% discount at any of the November or December pop ups to come. 

$250: All of the aforementioned rewards + a complimentary copy of my cookbook zine, Panadería with a personal thank you message card. 

$500: All of the aforementioned rewards + a complimentary holiday pastry box in November and December. 

$1,000: The aforementioned rewards + a private cake decorating class for you and 4 friends + a 20% discount at all future markets, pop ups, and other panadería events for the remainder of 2026 and for all of 2027.

 

There's no need to do anything on your end if you'd like to opt-in for the rewards. Anyone who gives in the specific amounts listed above will be entered into a spreadsheet on my end, and I will be in touch once the fundraiser is over. Please feel free to donate a smaller amount than $25, also, as any amount of generosity is truly meaningful. I am grateful to the people of Atlanta for your ongoing support, and to the non-local At Heart supporters.
